Because jams require puréeing the fruits, preservers don’t have to worry about perfectly peeling the fruits, and handling them gently so as to prevent them from browning.
   Home cooks wanting to learn how to jam and preserve fruits can get a primer on the matter Wednesday evening at First United Methodist Church.
